The menu sounds great! I do love spending time with family and the good food, but I won't lie, I'm glad when I get some alone time again :)

Here's my best approximation of a recipe:

Green Chili Cornbread stuffing
1-2 packages cornbread, prepared
1 package stuffing mix (seasoned or unseasoned)
1-2 cans green chili (or fresh green chili)
Butter
Onions
Celery
Sage
Salt
1-2 eggs
Chicken stock

Preheat oven to 350.
Prepare cornbread according to directions. Let cool completely (I do this a day or two ahead of time). Crumble cornbread and combine with stuffing mix.
Saute onions and celery in butter until soft. Mix with breads. Add green chili.
Add chicken stock until moist—you don’t want it soaking wet, but you definitely want everything nice and moist. I usually end up using about 2 cans of chicken stock, but it will vary depending on how much cornbread you make, how dry the stuffing mix is, etc.
Now you’ll also want to add sage and salt according to taste. I just keep adding and tasting until it tastes right.
Lastly, add the lightly scrambled eggs. Mix well.

Butter a baking dish/casserole dish, then pour the mixture in. Put in the oven, covered, for 30 minutes. After 30 minutes, remove the foil and bake another 20-30 minutes, or until the stuffing isn’t wet anymore, and is golden brown on top.

Absolutely...the only problem is it's one of those recipes I just do, not one I have written down. Let me try to walk through the steps and I'll post it a little later.
